I got the Tingly Cumin Dry noodles, and they weren’t too oily or spicy at all (contrary to other reviews). We also got the Mama’s Dumplings which were definitely on the oilier side, but that’s due to the sauce which is made beforehand. The noodles were so good that we had to get the Szechuan Garlic flavor to-go, but that soon was eaten within the same hour… Also the peach fruit tea is so refreshing and not too sweet. If you’re worried about too much spice, don’t be. It’s the perfect amount. And yes the cashier was very patient and helpful.

The noodles had such a nice chewy texture, and the cumin sauce was really rich and had a nice vinegary taste Dan Dan with pork - these noodles were also hand pulled and were very soft, almost pillowy with the sauce We ended up chatting a bit with the owner who was really nice and clearly has a lot of passion for authentic xian flavors and workshopping new dishes for the menu! Would recommend a visit, it was such a fun experience eating the noodles in the little area behind the shop
