  Ok. If you haven't figured it out, I only review places I think deserve four to five stars based on taste, quality and service. I have never had cachete until this place. Never heard of it. Did quick research on what it was. It sounded like it was cabeza. I ordered it plain in a burrito format to really taste the protein. I am undoubtedly a fan of fat. Ribeye steak? I'll be happy just eating the fat cap. So, this was very beefy tasting, extremely unctuous, very loose, moist and was like 70 percent protein and 30 percent face fat. AMAZING with a cold beer. It has collagen to where you get "sticky lips" like when you eat pata. It's so rich and flavorful, not lean at all but, absolutely satisfying if you are craving something fatty and beefy. The plain lengua burrito was standard. The tongue was not brined or marinated and I believe the flavors were intended to come from the condiments. It was tender, not dry and the chunks were big and not minced. I had it separately with Valentina, Tapatio and Cholula. Keeping the salsa simple was the right move. The adobada taco was alright. The marinade was not too flavor intense. It was just a hint of marinade and not salty. They grill their corn tortillas and mine had crunchy edges but overall, not completely torched. I'm more of a hydrated and not chewy corn tortilla. I'll give it another try and follow up with my experience. The staff were very friendly. My to go order came out faster than I expected. It took just about five minutes from placing my order for one lengua burrito, one cachete burrito and an adobada taco.

  Excellent machin burrito with great salsa. Casual place. Not the cleanest bathroom, but here for the food.

  My family and I have had the best food experiences here at Taco Machin! Quick to order.. FRESHLY made tortillas, charcoal carne asada, fresh Aguas, and honestly the best service. They are so nice and welcoming every time we go. I grew up in Mexico and have looked for the best tacos… while a lot of other places are good, taco Machin brings it home. They have the “Sazon” and that freshly made TJ/Tecate flavor. Not to mention the taco sizes are better here than all other places. Overall this in my opinion is the best taco shop in all of San Diego.
