There are three guarantees in life: death, taxes, and the expectation that when I go to Subway, my sandwich will be made my way. Unfortunately, that certainty was shattered during an ill-fated visit to a particular location. After receiving a regrettably burnt sandwich, I requested that lettuce and tomatoes be added before the sauce. Instead, I was met with a firm refusal, followed by the public declaration—delivered to the entire line—that “we don’t do that here.” In that moment, I was left not only disappointed, but embarrassed. I long for the simpler days when one could freely choose where the sauce belonged
