Let me start off by saying this: I travel a lot for work, I eat out constantly, and I honestly can’t remember the last time I felt compelled to leave a review.
I’ve walked past Fusion Bistro at least 20 times over the last six months. Every single time, the aroma hits you, warm, spiced, a little smoky, like it’s trying to pull you in. Tonight was no different.
I was on my way to grab a quick, predictable sandwich from a chain nearby and made a deal with myself: if they’re closed, I’ll finally try this place. Sure enough, closed. One minute too late. That was it. That little nudge. Call it fate, call it bad timing, I turned around.
From a block away, I could already smell the tandoor, charred meat, layered spices, something almost hypnotic about it. Walking in, I was greeted with a genuinely warm welcome. The manager, Kannan I think, big smile, great energy, the kind of person who makes you feel like you picked the right spot before you even sit down.
He helped me land on a mango juice. I was torn between that and guava. Good call. Sweet, refreshing, perfect start.
Now the food.
Since it’s a fusion spot, I skipped the obvious and went a little off script. Wings, masala fusion fries, and samosas.
And I’m not exaggerating when I say this, this is some of the best food I’ve had in Seattle. And I spend most of my time eating in the International District, so that’s saying something.
The wings. I don’t even know how to describe them properly. Garlic, sweet, heat, savory, balanced in a way that doesn’t make sense until you try it. It wasn’t just flavor, it was layered. Like every bite hit different.
Samosas. Exactly what you want them to be. Crispy, hot, well seasoned, and paired with sauces that actually elevate them instead of just sitting on the side.
But the surprise, the masala fries.
I expected overpowering. Heavy. Too much. Instead, perfectly crisp, just enough heat, not overloaded with cheese, and somehow still balanced. Easily some of the best fries I’ve had anywhere.
So yeah, maybe it was fate. Maybe it was just a closed sandwich shop. Either way, it worked out.
Kannan, if I got your name right, I’ll be back. Definitely for the chicken changezi you recommended, and probably those wings again.
