- EEEmilyMay 11, 20261.0Colectivo isn’t necessarily bad coffee, but it has a serious production issue. I came in on a Monday around 10 a.m. and waited over 30 minutes for a latte. During that entire time, only one barista was making coffee while another employee handled teas and smoothies. It honestly seemed like they didn’t have enough staff for the amount of foot traffic they get. While waiting, I talked with several other customers who had also been waiting 20+ minutes for their drinks. Many of them eventually approached the lone barista to ask about their orders. To her credit, she was polite and clearly doing her best, but we watched mobile orders continue to be fulfilled while more frustrated customers piled up in line. By the time I finally got my coffee and made it back to my car, my parking meter had expired. It’s unfortunate because this is actually a neat coffee shop with a good atmosphere, they just really need staffing and workflow that matches the volume of customers they serve.
