I’ve had great experiences at various Sushi by Bous in NYC, and unfortunately this one does not compare. There were a few pieces that were too salty and the fish does not seem to be of the best quality. However, I will say that the atmosphere/setting of the restaurant was great! The cocktails I ordered were also good.
It is an experience but its just a bit pricey overall. Probably won't be coming back.
An Absolute Masterpiece of Value, Flavor, and Vibes!
I recently experienced the 60-min, 17-course Bougie Omakase at Sushi by Bou, and to say I was blown away is an understatement. If you think a fast-paced omakase means compromising on quality, this place will completely change your mind. It is high-energy, precisely timed, and flat-out delicious.
Every single piece of the 17 courses was a hit. The chefs are absolute masters of their craft, presenting gorgeous cuts with flawless texture and flavor pairings. From melt-in-your-mouth fatty tuna to beautifully torched delicacies, the progression of the meal was incredibly satisfying. You get the premium, high-end feel of a luxury omakase but packaged in an approachable, fun, and fast-paced hour.
Beyond the sushi, their beverage program is stellar. They offer a remarkably wide range of signature cocktails, sake pairings, and high-end spirits. I ordered Chivalry is Dead to pair with my meal, and it was exceptional—perfectly balanced, smooth, and expertly crafted to complement the rich flavors of the fish.
Sushi by Bou has perfected the art of the modern omakase. The ambiance is intimate yet lively, the service is seamless, and the fish is top-tier. For 17 courses of this caliber, it is arguably the best culinary value in town. I will absolutely be back!
I’m so glad we’re getting quality omakase spots in SLC! We reserved a week in advance and booked for the 12 course.
We arrived a bit confused, but asked the concierge to then discover that this is a speakeasy. It was a cute bookshelf door that led us into the room.
We got started pretty quickly. The courses are: yellowtail, tuna, prawn, salmon roe, albacore, chopped tuna, scallop, miso cod, fatty tuna, salmon, wagyu&uni, and unagi.
My favorites were the miso cod, fatty tuna, and prawn. I especially loved the pieces with yuzu shavings which brightened the taste.
My one complaint is that there wasn’t enough wasabi served with the pieces. Having experienced omakase on the coasts, sushi chefs typically smear a bit of wasabi on their finger tips onto the rice before placing the fish on top. Instead, I asked for wasabi on the side and placed it on myself. They also offered an option of Australian or Japanese wagyu for ~$14 more. I stuck with the Australian beef, and it tasted pretty tough.
The sushi chef and I chatted and he didn’t seem very knowledgeable about sushi, but rather was there as a job. Nothing wrong with that, but I enjoy learning about fish and the chefs’ experiences.
We were also a bit rushed towards the end to make room for the next hour of people.
Overall, I had a good experience and would come back again.

A speakeasy inside the Peery Hotel, got some drinks while we waited. Intimate seating of 10 with 3 chefs behind the counter, the staff were all very personable and welcoming. We did the 12-course and they explained each and every one, which were all the best sushi we've ever had! Hard to pin point which one was our favorite. Everything tasted fresh, nothing fishy and they all melted in your mouth. It can get quite pricey for a single person since we've also upgraded to a Japanese wagyu but it was all worth it. Will come back for sure.
