Excellent sushi, especially at the 5pm promo price.
Despite some reviews saying it wasn't enough food, we did the 12 piece menu and everyone left satisfied - they offered more at the end and we didn't need it. We went for a friend's birthday and they did a great job making it feel special with both food and drink upgrades.
While it was less omakase and more prix fixe sushi, they did a great job of blending traditional nigiri with some adventurous and seasonal combinations I had never seen before, and our 'favorite' piece kept changing as the dinner progressed - hamachi, seared scallop, miso cod, chutoro, caviar, waygu, bone marrow and truffles - I would have thought that some of the pairings would be over the top but they were restrained and paired well.
The only downsides were that the cocktails, though good, were not blow-away and although they let us linger and finish our drinks beyond the alloted hour, it would be nice to have the dinner more spaced out, but for the price their format makes sense. I am hoping the menu changes seasonally and would definitely return.
Unlike anything else in Salt Lake City. This embodies the true speakeasy vibe, hidden behind a secret bookcase door in the Peery Hotel. Great sushi, delicious cocktails and a unique experience to match. It's a must-do!

Pros:
- Service: excellent, the 2 chefs making sushi were wonderful and fun. The girl working the bar was spot on every time. Absolutely no complaints about the staff, as they were perfect!
- Vibe: small, nice, chilled. Only 10 seats at the bar and everyone is close to the chefs at all times and interacting. Was a fun vibe!

Food: was a HUGE let down. Flavor was great and I enjoyed every bite but the deal is I paid $100 and wasn't even full when I left. Like seriously I could have easily stopped at McDonald's and ordered a value meal afterwards no problem and I weigh a 150lbs.
Here is an example to help you visually understand: a sushi roll comes with 8 pieces, right? You are basically paying $50 each for a sushi roll for a total of $100. I don't even start getting full until I'm on the 3rd sushi roll.
The size of each piece of Nigiri was so small (good but small). I had originally paid for a 12-vourse meal and I'm not sure if I did good of bad by upgrading to the 17 course because if it had been 12, it would of felt like a snack. I feel stupid for coming here honestly.
This place is a franchise and I don't fault the staff at all... This is embarrassing for a restaurant and blame falls strictly on management.
This could easily be fixed by adding a few courses at the end that are heavier on the rice and let one at least leave feeling satisfied versus pissed off.
Celebrated my birthday with a 12-course omakase at Sushi by Bou and it was such a great experience. The portion is perfect, especially if it’s your first time trying omakase—just enough to enjoy every piece without feeling overwhelmed.
The restaurant itself is a fun hidden gem, tucked behind a bookcase, which makes the whole experience feel even more special and intimate. The chef was friendly and welcoming, and each course was fresh, flavorful, and beautifully prepared.
Overall, amazing food, great vibes, and a memorable experience. Definitely a perfect spot for a date night or any special occasion!

The sushi was incredibly fresh and flavorful. Standouts for us were the miso cod and chutoro, but everything was exceptional.
Will say we were still hungry after the 12 course even with an extra fish thrown in, we definitely got some nuggets after.
Also while the sushi chefs were nice, the social part was off for us. We like watching what you’re doing, that’s the entertainment! we don’t need forced socialization, also if you want to socialize keep it positive! Talking negatively about other sushi places feels icky. You can have good sushi, but so can other places.
The one frustrating note: we booked specifically because of a caviar bump promo being advertised on Instagram. When we arrived, we were told they were out. To their credit, they did honor the mocktail portion of the promo, which we appreciated. But watching another table receive the caviar bump right before us made the explanation feel hard to believe, and it put a damper on what was otherwise a great meal.
Worth noting the promo is still actively running on Instagram, so it may be worth updating to avoid the same experience for other guests.
