I've been eyeing this place for a long time to try it. It's located in a strange spot, and I always forget about it until I drive by.
We walk in, and customer service was pretty basic, like at McDonald's. They were out of the grilled onions, which are on most of their burgers. We ordered the mushroom bison burger, Houston bison burger, chili cheese fries, and one fountain drink.
The first issue was that all their sodas were flat and had a weird taste. I then switched to their tea, and that tasted funny too... The only good food we had was the chili cheese fries, but that won't make me come back.
The burgers were basic, nothing impressive enough to write home about. Just meaty is the best way to describe them. Flavors were less than In-N-Out, which is already flavorless.
While we were sitting outside around 8pm, the lights and fan turned off, and no one inside even bothered to check if it was a problem. I felt so lied to by these reviews.

I haven't been here in years. The food was just as good as I remember. Bison burger and a beer..yum! They have added a lot more outdoor seating.

I ordered a patty melt and was really looking forward to it, but the bread was burnt and had a bitter taste. I didn’t realize until I got home, which was disappointing because it probably would’ve been really good otherwise. Just wish a little more attention was given before it was served.

Unique burger joint in the city! Situated underneath the highway it’s a cool spot to grab a burger.
The staff were very nice and offered recommendations on items on the menu.
I ordered a single burger with American cheese and all the toppings and fries and a soft drink.
Fries were great. Only that 1 or 2 fries were somewhat cold. The burger was a solid 9/10. Very fresh and delicious taste. Was a bit on the smaller side for price you paid.
For single patty + fries + soft drink I paid around $18. All in all I recommend checking out Bubbas for their unique ambiance and good food.
I’ll have to come back to order the onion rings and try the hot dog.
