I had the absolute pleasure of meeting Mr. Ian and Mrs. Maggie at Fairport Canal Days this year. Not only are they themselves truly fantastic individuals, but you can tell that they genuinely care about their priduct. As a former catering and bakery employee myself (now a business admin and HR rep), you can really see the attention to detail they put into the process of making their shortbread.
People often asked how I remained so thin while working at a bakery, and answer is that I am INCREDIBLY picky when it comes to my sweets. I don't like my desserts to be too sweet, so I adore a good shortbread, but have never been able to find a store-bought shortbread that I enjoy. That is, until I met these two.
Their shortbread is the perfect balance of sweet and just slightly salty, the same kind of wonderful combo you get from a good crumb in a crisp. I can tell from my time in the bakery that they don't over mix their dough, and they must take extraordinary care with the baking process. It isn't too hard, I'm not biting into a brick, but it's firm enough to hold its shape. However, while it holds it's shape very well, the minute you dig in, it crumbles in your mouth and you are hit with a rich, slightly buttery, sweet flavor that gives you a sense of just overall happiness.
I may not be Scottish, but I have had genuine Scottish shortbread before, and let me tell you, it really IS genuine Scottish shortbread! This tastes like it's straight from a Scottish woman's kitchen! You get that good homemade taste, but the best part is that you can just buy this instead of having to through the hassle of making your own (because let me tell you, it's a process).
It's worth every penny, considering the price of ingredients and the sheer effort of making it, and you get to support two amazing people that truly have a passion for what they are doing. My only regret, is that it took me so long to write this review and the fact I didn't get a chance to buy the lemon lavender shortbread. Regardless, you best believe they have my support!
Who knows, maybe when I get my tea business finally going on Etsy, I'll be able to pair them with some of their delicious shortbread.
