  Update: I've now tried several different cuts and I can honestly say it's amongst the best quality of beef I've ever had. The flavor profile is rich and unctuous. Even the cuts that are traditionally tough come out beautifully. For example, today I just made a sirloin tip steak that is extremely lean. I seared it on a cast iron griddle pan with some seasoning and ghee before putting it in the oven to finish cooking and it is as tender as a much fattier cut. The flavor though. Oh my goodness. You cannot compare this beef to anything you get at a regular grocery store. Even the organic grass-fed beef from chain supermarkets doesn't have this flavor profile. I am very hesitant to season a steak with simple salt and black pepper with butter. This steak holds up against such a minimal seasoning because of how well the cattle are treated during their lives.   We got half a cow from them and let me tell you! It was absolutely amazing! We got so many steaks and roasts and ground beef we have enough to hopefully last our family of 6 for a year! We are so pleased with the quality of beef! The steaks are tender and full of flavor, the roasts are juicy and absolutely delicious. The ground beef is definitely now a staple in our home! Micah was such a huge help with us being first time buyers. I couldn't be more grateful with how patient he was and how he explained everything in detail. I don't think we'll ever go back to store bought beef again!

  Recieved my whole cow a few weeks ago and wanted to make a couple meals before I made my review. First I'd like to start off and say that the customer service recieved from Micah was hands down the best. He helped us understand the entire process and was quick to answer every question we had. We went to check out the farm and he kindly showed us and explained how the cows are taken care of. You do not get that kind of service when picking up a package of hamburger from the grocery store. NOW TO THE MEAT; I have made a couple meals since receiving our cow and have had no complaints. The T-Bone steaks were HUGE and so flavorful. Tonight I made Guinness beef stew bowls and my husband said it's the best beef stew I've ever made (mind you, the ONLY difference was the quality of meat!). We appreciate all the time and effort Micah put into helping us with our very first cow purchase and it will not be our last.
