For real, I've had boomer coleslaw with more flavor. There was zero seasoning on my taco, the churros were barely sweet and tasted like fry oil. The cook was fine and polite, he just works there so nothing against him.

I cant say Id like to go back... and this is not our first time here. The first year or so that we went, the food was delicious. So much flavor, good portions and so forth. We havnt been in awhile. You enter the establishment and there is some window/ bar seating and only two tables with two chairs each. The ordering menu is touch screen and honestly irritated me because my daughter just wanted a walking taco just chips and chicken since there was no ground beef, mind you that item alone is $15. It has a "special request" section and her food was still made with cheese. Also ordered Ramen birria, the amount of oil in the consume was outrageous and that was all I could taste. Its deffinately not as flavorful as it used to be, more watered down it seems. Decent amount of noodles but not much meat. On the positive side, the hot sauces they hand you in the tiny cup are still tasty. I didnt think it was worth the price or the half hour wait, sadly.

Man what happed to this place, haven't been in about year and won't be back. Got a Quesabirria Pizza doesn't even taste the same as used to. Not sure if you changed food vendors or what's going. Street corn was rough also not much mayo like it used to have. What happened to kids free quesadilla? Now you got Seven dollar grilled cheese like Applebees, just wild.

I’ve been all over this big, beautiful Earth and have eaten more tacos than I probably should admit. So when I was visiting West Virginia, I was told I had to make the short trip across the border into Maryland to try Papi Tacos. The recommendation came from a trusted source... another taco-loving foodie like myself... so I figured, what could possibly go wrong? Well... everything. I made the mistake of ordering my food to go and only getting one of several different tacos to sample. That was a huge mistake because these were some of the best tacos I’ve had in a very, very long time. I tried the chorizo, carnitas, carne asada, and birria tacos. Every single one was outstanding, but the birria with the consommé was on another level. Without question, it's the best version I've had yet. We also ordered the birria ramen, rice, pinto beans, chips & queso, street corn, and finished everything off with churros. To wash it all down, I had a horchata that was just as good as everything else. There wasn't a single item that disappointed us. The only thing that made me upset was realizing I wasn't dining in because I wanted to walk back into the kitchen and hug the team. Everything was fantastic from start to finish. The three of us absolutely demolished every bite. Honestly, I almost wished I'd parked on a side street so I could tell people I got robbed. And technically, that wouldn't have been a lie, I was robbed... robbed by the fact that I live too far away to eat from this menu whenever I want. If you're anywhere near Papi Tacos, do yourself a favor and stop in. Your taste buds will thank you. Mine are still talking about it.

Whenever I test a new taqueria, I always start by establishing a baseline with the foundational staples: chips, guacamole, and queso. Big Pappi’s Tacos in Hagerstown immediately proved they are operating at a high level. The guacamole was impeccably fresh and perfectly seasoned. The chips were served fresh and intentionally lightly salted, acting as the ideal, unobtrusive vehicle for the dips rather than competing with them. While the queso was just a touch on the thinner side regarding its viscosity, the flavor profile was absolutely excellent. The true test, however, was the Birria tacos, and the kitchen’s execution was top-tier. They featured deeply flavorful, slow-braised beef nestled in a perfect layer of melted cheese inside a corn tortilla. Crucially, they were finished on the flat top to achieve that beautiful, fat-crisped sear on the exterior, delivering the exact texture you want from an authentic birria taco. The onion and cilantro garnish was scaled with precision, providing the necessary bright, acidic bite without overpowering the rich meat with raw allium flavor. What truly elevated the dish was the consommé. A birria taco is only as good as its dipping broth, and this one was flawless. The slow braising process clearly extracted the necessary collagen from the beef, giving the consommé a beautifully rich viscosity and an incredible mouthfeel that clung perfectly to the taco. Served alongside a fiery, deliciously complex salsa roja and a bright, excellent salsa verde, every component of this meal worked in perfect harmony. Big Pappi’s Tacos is well-deserving of a flawless 5-star rating. Seeing the caliber of the food coming out of the kitchen—including nachos and loaded fries that looked phenomenal—I will absolutely be returning to explore the rest of their menu. If there is one thing that I would "complain" about, it would be that the beverages are overpriced. $3.50 just seems high for fountain beverages. And $5+ for lemonade...no matter how delightful, also feels high.
