Foie gras is traditionally produced by force-feeding ducks or geese to enlarge their livers, a practice that raises serious animal-welfare concerns. Whatever the culinary tradition behind it, I don’t think unnecessary animal suffering should be treated as a luxury dining experience. Restaurants have plenty of ways to create excellent food without supporting this practice. Serving foie gras is enough to make me choose somewhere else, and I hope the restaurant considers removing it from the menu.

Production is banned in the U.K., Ireland, Australia etc. because birds are force fed until their livers enlarge 6-10 times their normal size, causing organ failure and difficulty breathing. Hoping Blue Salt removes the cruel product so we can support them.
