Food was great except that the sushi rice was undercooked…the restaurant itself was underwhelming

We had such a wonderful experience at Sushi by Bou! We had a reservation for a group of eight to surprise a friend for her birthday, and we accidentally left one person off the reservation. Jason was absolutely incredible—he went above and beyond to accommodate our group so we could all be seated together. His kindness and willingness to help made what could have been a stressful situation completely seamless.
The entire staff was friendly, attentive, and welcoming, and the food was absolutely amazing. Every course was fresh, beautifully prepared, and delicious. From the exceptional service to the outstanding dining experience, everything exceeded our expectations.
Highly recommend Sushi by Bao, and a special thank you to Jason for making our celebration so memorable!

I left Sushi by Bou with mixed feelings.
Let me start with the positive: the sushi is truly excellent. The fish is incredibly fresh, every piece is carefully prepared, and the quality of the food is undeniable. The chefs do an outstanding job, and the omakase itself is a pleasure to experience.
My disappointment comes from everything surrounding the meal. For the price, I expected a complete premium dining experience. Each omakase menu should at least include a dessert, especially at this price point.
The biggest issue, however, is the location. Sushi by Bou does not have its own dedicated restaurant space. Instead, it operates as a sushi counter inside a bar that is itself located within another restaurant. While the concept may work for some guests, it takes away from what could otherwise be a truly exceptional experience.
The sushi deserves its own venue. The quality of the food is high enough to support a dedicated restaurant where guests can fully appreciate the craftsmanship and atmosphere that an omakase experience should provide.
The food is outstanding, but the setting does not match the level of the cuisine. With its own space and a few thoughtful additions, such as dessert being included, Sushi by Bou could easily justify its premium pricing and become a destination worthy of its excellent sushi.

Sushi by Bou was probably the best dining experience I’ve ever had. The private and intimate setting allowed us to chat with the sushi chefs who were extremely knowledgeable, kind, and funny. Each dish was phenomenal and perfectly hand crafted. The chefs were also accommodating if there were any specific allergies or food restrictions. Huge shoutout to Wilson and Gabi who were so friendly and attentive. I can not wait to come back to sushi by bou!
I've been to several locations. This one is completely different. Typically, at least in my experience, you get attentive service and the chef provides information and guidance about how the dinner will progress and what you're about to eat. Here, we didn't even get water until 30 minutes into dinner, and the one drink, just a draft beer, didn't arrive until latter half of service.
More importantly: the food was, frankly, bad. All but 2 pieces were torched and smelled and tasted of uncombusted fuel. It ruined what otherwise looked like decent cuts of scallop, tuna, salmon, eel, among others. The whole place just reeked of fuel. It was a real waste. On a personal and admittedly subjective note, I find beef and uni to be an offensive combination, but objectively, it was absolutely sloppy as nigiri.
The room is shoddy. The foot rail is broken, and we got two chairs of different heights. The acoustics are awful, which would have mattered more had the staff tried to engage at all. Still, there is extremely loud ambient noise and difficult to hear even the person directly next to you.
Overall, it was a pretty lousy experience and absolutely not commanding of the $200+ price tag.
Although I'm sure this is out the restaurant's control, note that parking is $16. And another tip: the lobby staff are trained to tell you to "make a u-turn" when giving directions to find the location. You do no such thing. Everyone went the wrong way. You simply go out the door to the pool area and go though the gate right in front of you. Mind boggling how contorted and labored they have engineered such a basic thing.
