    Maria Bonita in Longmont said “no thoughts, just tortillas” and I have never respected a business more 🫓✨ Okay so backstory: I went in just wanting tacos, casual Tuesday vibes, in and out. WRONG. The second they brought out the homemade tortillas I actually stopped mid-sentence talking to my friend like sir I am SO sorry but this is a religious experience rn. They’re warm, they’re pillowy, they have that slight char that says “someone’s abuela raised me correctly.” I do not make the rules, I just eat the tortillas and weep. I ordered them literally by themselves at one point just to have something to butter and my friend said “you’re being unwell about this” and yes. Yes I am. That’s the whole review honestly. The tortillas alone deserve their own Yelp account, their own fan club, their own Grammy category. Then the food came out and it was also slaps — but not the point right now, we’re still processing the tortilla situation. DESSERT THOUGH. Bestie. We got the tres leches cake and I had to put my fork down for a second out of respect. It is SOAKED, in the best way, like the cake absorbed all its dreams and turned them into moisture. Not soggy, not sad, just perfectly drenched sweetness with that whipped topping that makes you go quiet mid-conversation. My friend literally said “okay this is not a joke anymore” and she was right to say that. And then. THEN. The hot chocolate cake arrived and I need everyone to understand this is not a metaphor, there is an actual caramel center that oozes out the second you cut into it like the cake has a secret and it just wants to tell you. Rich, deep, chocolate-on-chocolate, no notes. And it comes with homemade cinnamon-chocolate whipped cream which is honestly unfair to every other whipped cream that has ever existed. I took a bite of just the whipped cream by itself, alone, no cake, and did not feel bad about it for one second. We fought over the caramel center. There were minor injuries (emotional). Service was sweet, prices are fair, portions are generous, and the whole vibe is “family owned and they actually care” energy, which honestly hits different in 2026 when everything feels corporate and soulless. TLDR: go for the food, stay for the tortillas, lose your whole personality to the tres leches and that caramel-center chocolate cake. Maria Bonita understood the assignment and then some. 10/10 would recommend to literally anyone with a soul and a stomach 🙌🧡

    Fajitas were the worst I have ever had. I lived in Texas for 3 decades and this is not even Tex-mex. The marinade was sweet! No spice and tough meat. I am so sad. Their churros are made from frozen. The only house made dessert is tres leches cake which was already gone at 5pm. So sad.

    They sat us right away after they greeted us and introduced us to our waiter . Our waiter took our drink order and was great about checking on us before and after we received our food. We didn't have to wait much for our meal to come out. Our waiter Ricardo was friendly and helpful in all he did to make our experience great.

    There's something about this block of restaurants that fosters mediocrity. With a decision between this and Pepper's next door, just choose whichever has the least wait time.

    Maria Bonita has delicious food, great service, and an absolutely breathtaking view. It did feel a little overpriced, but the friendly staff and beautiful setting still made it a memorable experience. If you’re looking for a meal with amazing scenery, it’s definitely worth a visit.
