When I asked how to cook it, he tore off a piece of butcher paper, handed me a sharpie, and said, “I’ll talk, you write.” I learned more about cuts of meat and cooking it than I ever expected and left with a new friend and a greater appreciation for Southern Steer Butcher. Oh - and their turkey and Jalapeño Sour Dough were amazing too! Highly recommend!
