Disappointed that a food item that had been on the menu for over 20 years was no longer available, however everything was still excellent as always!!

First time visiting a Carrabbas. Place was jammed packed for a Friday evening so usually that's a good sign.
Had a 10 or so minute wait. While waiting on the bench near the host stand.. noticed very dirty and dusty window ledge (by front door).
Host was professional . Server was friendly as she could be for being so busy.. Definitely no time for small talk.
Again noticed the considerable dirt built up on the window ledge next to our booth.. cobwebs on the outsides of the window panes. Crumbs on the sides of the booth cushions where they meet the wall. The place definitely needs to be cleaned better by the overnight staff.
Calamari was a pleasant surprise...crisp and peppery. A good sign is that it didn't get all rubbery as it cooled down.. it remained edible to the end.. Slightly salty however.
Our pasta dishes were ok..wife specifically asked for the pasta “al dente”… to which the waitress replied “ im not sure the cooks can do that now since we are so busy” … but also told us to “send it back if its too mushy”…. Which is kind of confusing.. regardless…pasta overcooked (no one in the south knows how to cook al dente pasta, apparently).
Just overly heavy and salty sauces. Nothing delicate about these dishes. Can't say that I feel that this was not worth the money, nor would I saw it was any kind of deal.
We drove about 30 minutes, trying to find decent Italian in knoxville farragut area....all the mom and pop places consistently let us down so we resorted to the chain type. Still not impressed. If, and a big if, we return maybe I try the lasagna or chicken parm, instead of a lead weight cream pasta dish.
The food was adequate, the place needs to be cleaned. And we definitely had that “rushed” feeling from the waitress you can get when a place is busy… like its not a good idea if you actually take your time to enjoy a meal (although the food came out in a timely manner).
