    Try some Cava, have some Spanish beer from Galicia. If you're lucky, you'll be served some amuse bouches of gaspacho and some olive gastronomy on a little wooden spoon or a splash of Cava. Everything I've eaten has been really good. I'm very picky when it comes to Spanish food. As far as I'm concerned, it's almost impossible to find good Spanish food in the US. I've been all over Spain multiple times and I miss it so much, it's nice to have those memories brought back to me. Don't leave Jaleo without having some sort of jamon, maybe some patatas bravas or tortilla de patata and a paella 🥘 is a must.

    It’s Las Vegas. A neon-soaked fever dream where the house always wins, but occasionally—just occasionally—you find a corner of sanity. Tucked away in the Cosmopolitan is Jaleo, José Andrés’ love letter to the flavors of Spain. We wandered in recently and found ourselves at the bar for the Sangria Hour. It’s a tactical maneuver: high-end DNA at prices that don't feel like a shakedown. The drinks kicked things off with purpose. A crisp lager from a local brewery for me, and for my better half, a Sangria de Cava that actually tastes of the vine rather than a sugar factory. Jennifer, our bartender, was the real deal. In a city of scripted smiles, she was fast, friendly, and knew the menu like a map of her own hometown. Her support team was a synchronized machine, delivering plates with the kind of effortless precision you usually only see in a high-stakes heist. Then, there’s the food. The **anchovy cones** are a masterclass in balance—salty, sharp, and over far too quickly. The **Pan de cristal con tomate**? A revelation. It’s bread, sure, but it’s bread that’s been elevated to an art form. We hit the **fried potatoes**—crisp, golden, and honest—and the **endives**, which offered a clean, bitter snap that cut through the decadence. We eventually drifted off the happy hour menu to close the night. A pour of **Don Julio** for myself, and a **cheesecake** for my wife that was, quite frankly, fantastic. If you’re in this desert oasis and want to taste something authentic without burning a hole through your pocket, get here for the happy hour. It’s a rare win in a city built on losses. We’ll be back. Highly recommended.

    Truly one of the best experiences we had in Las Vegas. I'm a huge fan of Jaleo in Orlando, and Jose Andres in general, so naturally Jaleo LV was a must-try. We met up with another group and I was handling the ordering for our party of 7, hitting all the faves (Croquetas, Quesos, Gambas al la Zahara, my fave Pulpo, and plenty more) when I saw something being carved up in the open-air kitchen area that looked interesting. I walked over to check out what it was and had a great conversation with Chef Laura who told me all about the Jamón Iberico de Bellota Cinco Jotas. She was laying it out beautifully for an order, and offered to let me try some, and all I can say is WOW. Incredible, complex flavor that melts in your mouth. We continued dining and drinking for awhile, and at the end of the meal, our server came with a full desert tray compliments of Chef Laura! Everything was incredible about this experience, and we were all so impressed we can't wait to come back again. You can clearly tell that Chef Laura takes pride in not only the amazing food at Jaleo, but the guest experience as a whole, which together makes for a top-clase dining experience. Thank you, Chef!

    I have traveled the globe and eaten at many wonderful restaurants. This one rivals the best. We did the Paella tasting menu and every dish was unique, innovative, and tasted amazing. They happily accommodated one member of our party who was pescatarian and another who was allergic to shellfish. Our server was world class. It is a little noisy, and so sometimes conversation can be a little difficult, But nothing that wasn’t manageable. Would absolutely recommend this place you won’t be disappointed

    I love Jaleo - when we lived in town, we visited regularly and often took guests. Nearly 10 years later and it's just as good. We've been to the locations in Disney Springs and Crystal City (now closed), and this one is still my favorite. It's a fun spot in the Cosmopolitan. The food is delicious. The tomato bread is simple but amazing. I love the Serrano ham. There are so many good options! Great place to bring friends and hang out.
