I was a lone traveler on a weekday evening staying at the Cosmopolitan and I saw their Happy Hour menu on my way out to the bridge, the menu looked great with very good prices, and so decided to come back to hotel on time for HH.
Happy Hour is only in bar area and they have two wide half-circle shaped bar area right by the entrance. One bar is more of Mexican vibe and the other one was open kitchen concept of Chinese dumpling bar. I was seated right away on the Chinese dumpling kitchen side and was greeted and served promptly.
I'm always so impressed by common sense and quick thinking of Las Vegas strip hotel bar staff, it must be a competitive hospitality market here and they select best of the best. The gal who served me made sure I'm okay with some spices and beer choices that were under HH. I had Corona Premier ($7) and a Frijoles Taco ($5) and Chicken Lettuce boats ($7) with crispy potato shreds on top.
The food was phenomenal and with this price I would definitely come back. The servers also checked on me to make sure I didnt need anything else and I was having fun even dining alone, just from the crowd at the bar and cool servers chatting with me. All customers were in great mood, that tells me a lot about the quality here. I highly recommend this place, the Chinese Mexican cuisine in one place, and they keep the menus simple and authentic, no fusion stuff. Each menu is true to their own cuisine.

China Poblano at the Cosmopolitan is a fantastic fusion of Mexican and Chinese cuisine. I was really impressed by the taste, quality, and attention to detail throughout the meal. The portions were generous, and the fresh guacamole prepared right in front of you was a great touch.
The Monk18 noodles with chicken were especially delicious, and the tres leches cake made for the perfect ending. Overall, it was a memorable dining experience with flavorful food and great service. I’d definitely recommend making a reservation in advance, as it can get busy.

What a fantastic experience! We were immediately greeted by Julio who was the consummate professional. Kind and welcoming, he definitely set the tone for the experience. He explained about the concept of the restaurant and how food is ordered and delivered. We ordered the chips and salsa, spicy wontons, Carnitas taco, and the Pollo a la Parrilla taco. Thank you again. Everything was absolutely incredible. From the flavor of the food to the quality of the service, it was a great experience all the way around. Highly recommend this restaurant. I fully intended to take more photos of the food as it came out, but I was so excited that I quite literally was overwhelmed and forgotten to take pictures except of the chips and salsa.

We e been to China Poblano at least 3 times over the years. Everytime we go it's on point. Two things we get Everytime are the When Pigs Fly steamed buns and the Quesa Birria tacos. Both are just spectacular and we crave them every visit. This time we also got the table side guacamole and the spicy wontons. The guac is so fresh and I love they can control the heat level. But we dared our sever to see how hot it could get. She got it up there but the flavors were never lost. The spicy wontons were so good. Excellent spice level with the chili oil, excellent cook, and the shrimp and pork we so flavorful.
I will always recommend China Poblano to anyone asking where they should eat when they visit Las Vegas
