Dined at Coletta in Cary recently and unfortunately left feeling disappointed. We had heard great things so we were really looking forward to it.
We started with the Caesar salad, but the dressing was extremely bland, almost milky with very little flavor or Parmesan. Our server agreed it didn’t look right and had it remade, which we appreciated, but the second one tasted nearly identical and still lacked flavor.
The pizza took close to an hour to arrive and came out lukewarm with a heavily burnt crust around the edges. It listed multiple cheeses, but there was very little cheese overall, and the prosciutto didn’t look particularly appetizing. The pasta was also lukewarm and had a beef gravy flavor that didn’t match expectations.
Service was kind, but we waited about 30 minutes to place our order, and overall timing felt long considering the restaurant wasn’t very busy. For the price point and atmosphere, we expected more consistency and better execution.
Hoping this was just an off night, as we’d love to see the experience match the reputation.

Colletta was the most memorable dining experience my family has ever had. We took my son for his birthday dinner. The music was happy, and the lightning made our table cozy. Our server, Corey L, was attentive and offered great recommendations. We ate family style so my son could try all the food. We agreed the grilled Swordfish and Lasagna Bolognese (layers of love) were our favorite dishes. The chef made a special dessert for my son that was unique and delicious. The thoughtful Maitre D, Mattie, surprised my son with a special treat. We were blown away. They truly go above and beyond to make this night unforgettable. We will be returning with friends. We had a beautiful weather night in Feb to celebrate Valentine's Day a little late. We were seated outside, but the ambiance inside looked amazing as well. You can't go wrong. Friendly hosts and our waiter was absolutely amazing! Shout out to Ulysses! He was great! Everything he recommended was amazing. I highly recommend the lasagna and the lobster spaghetti (while it lasts)! The ceaser salad? OMG! The best. We asked him to pick the wine, and the Chianti was amazing as well. Ulysses then sold us on the Spumoni, which I had had never tried and my date doesn't really like. But he talked it up and he was right! Absolutely right. Life changing desert lol. Last he brought a single meatball (on the house) to share and said "next time you have to try this". Right again! Amazing! I will order meatballs next time.
If you're in Fenton / Cary, NC and craving a great Italian dinner experience, ask for Ulysses at Colletta! Can't wait to go back and take some friends!

We chose Colette for a rare date night the week before Valentine’s Day, hoping for a relaxed and romantic evening. The restaurant itself is beautiful, with a great atmosphere and prime location at Fenton — we had high hopes.
Unfortunately, service was very slow from the start. We waited quite a while for our waitress to check in and ended up flagging someone down to order drinks. It took close to 20 minutes to receive a glass of wine and an Old Fashioned. The drinks were good, but quite pricey considering the wait.
We ordered the calamari appetizer, which was over $20 and unfortunately too salty to fully enjoy. Because of the delays, we ended up skipping dinner altogether to make our movie time, which was almost two hours after we had been seated. Spending close to $100 (including tip) on two drinks and one appetizer left us feeling disappointed, especially given how rarely we get a night out.
There’s definitely potential here — focusing on more attentive service (especially in the bar area), refining menu execution, and ensuring pricing aligns with the overall experience would make a big difference. We truly wanted to love it and hope to see it improve.

The only reason I gave it 2 stars for service was the nice guy that was either a bartender or server found an open spot in the bar for us, not even in his section AND the runner/manager (not sure his role but he delivered food to us and the party next to us, was very polite, had sense of urgency and stepped in where out waitress did not).
So we stopped in to get a 2+ course meal before going to the movies, as an early Valentines day, to avoid the rush. We had not been out without our 3 kids and someone to watch the dog in over a yr and though I was laid off back in Sept, it was an occasion to celebrate, we needed it and we were STARVING!
We arrived around 750ish and the place was packed. Hostess said it was 2.5 hrs for a table but bar was open seating. I saw nothing open, started to leave and the polite guy with light beard offered us up a spot where 2 others just left. Now granted, this should not even be an actually location to eat (slim bartop, tucked against and slightly behind a support beam, with all the "extra" chairs stored around it. That didn't really bother us out the gate, as we were hungry and needed food and a beverage asap! At 1st the waitress was kind and attentive, coming back to wipe down the bar top, serving us water and promptly getting our app in. I noticed a 4 top booth open up as we sat down and just assumed someone had reservations. We received our paper menus and had to use a flashlight to see what the options were and we were a little shocked by the price, limited options and again, paper menus. We decided to get our drinks and try the app before deciding how to proceed but a good 15+ mins passed and even in the small alley passageway that our waitress passed through 4-5×, I could NOT get her attention (I could have rudely stepped out, reached out or called for her but felt all were not appropriate responses, assuming she was just slammed). So we are hungry, thirsty as our room temp tap tasting water was gone and the HANGRY part started to come over me but then like magic, the runner/manager brought our calamari and I was good for now...so we thought! We thought for calamari $5-7 over typical price ($19) that it would either be a larger serving and/or just amazing. Well I should have trusted myself after the 1st bite bit again, we are over 20 mins in, no drinks and the 1st words out of my mouth were, "calamari please", sonI kept eating. The first bite was like eating a super salty pretzel, where too much large grain salt to dough ratio makes your face almost pucker. The breading was not light, nor crisp, rather old nasty grease, crappy breading and a ton of salt to mask the lack of effort. Then my wife noticed a few rings had been extra squishy and super fishy tasting. I noticed a few too but was starving. At that point I saw the waitress opening a bottle of wine for that same table that was cleared as we arrived and sat 5-10 mins before we got our appointment. I needed something to drink, so kindly asked the runner/ingredients if he could please.put our drink order in. At approx 30 mins into our exp (only 5ish mins after we asked him), we had our drinks (served by him). Right before that the waitress came by and said she heard we got drinks and asked if we were ready to order food. Once we got our drinks (they were good, not great for price), we decided we'd rather take a chance with over priced movie theater food, so we asked for the check when she passed ny 10+ mins after that. The bill for 2 decent drinks and 1 crappy app was $52. I left approx 15%, as I worked as a waiter for many yrs but I would never even look in the windows of that place ever again!
