Unsurprisingly, I found the location to be dilapidated, in need of extensive repairs and renovations. Then I thought, this site would make a great location for a Caribou Coffee Cabin, considering the diversity of retail development in the immediate area. With that said, there is not one Caribou Coffee location anywhere on the East Side now that Bruegger's/Einstein Bagels closed at the Sunray Center. Has this site been prospected for a future Caribou Coffee location? It would require serious investment from Caribou. I suggest that opening such a location would be symbolic of Caribou's commitment to underrepresented demographic communities of color unique to Saint Paul's East Side.
