Founded by husband-and-wife duo Mike and Abby Rakun, Benedict’s first opened in Wayzata, Minnesota in 2018 and has since become a go-to morning spot for students, families, and brunch lovers alike. Our newest location in North Mankato opens June 2025, bringing our signature sunny-side-up hospitality and vibrant breakfast vibe to a whole new neighborhood.
