  Hope Breakfast Bar in Edina offers a fantastic selection of vegetarian and vegan dishes alongside all the classic breakfast temptations—think pancakes, waffles, and fried chicken. There’s truly something for everyone, whether you’re craving comfort food or looking for plant-based options. They also have a full bar, plus plenty of creative non-alcoholic drink choices. The space is kid-friendly and very casual, yet still maintains an upscale, welcoming ambiance. Service can be a bit slow, mainly because the place is popular and often busy, but the food is absolutely worth the wait. It’s a great spot to relax, chat with friends, and enjoy a laid-back meal—as long as you’re not in a rush. Definitely worth a visit if you’re in the Centennial Lakes area of Edina!

  This place has a really friendly atmosphere-and it wasn't just the clean environment and bright aesthetic. Even staff that weren't interacting with costumers (a few were prepping silverware at the front desk) were smiling. Our server Tra (I hope I spelled it correctly because it was pronounced like Trae) was amazing! He truly deserves a shout out! Like all breakfast pros out there I never had to worry about an empty coffee mug. As someone with special dietary needs, Tra was patient and knowledgeable which made me feel confident in my choices... And it was amazing! (I had the banana churro waffle Gluten Free) I will definitely eat here again! And hopefully we get Tra again!

  Interior has pops of greenery like the st paul location but all the plants are fake and it really fails to come together or feel less like a big open space. Our table of 6 enjoyed the breakfast, I found service lackluster, I had to ask for a second small glass of water and was never offered a 3rd but was asked 3 times if I wanted to order a coffee or cocktail. Everyone at our table was asked if they wanted to upgrade their hashbrowns or meal to the point it was annoying. The mandatory 20% for poor service on a group of 6 was a pain but then the 3% credit card surcharge is just a kick in the teeth. At 90 minutes our waitress came over and said their next reservation was due momentarily despite the 4 tables to the left of us being empty... just not a great experience, and not one I would return for.

  Great atmosphere, but service is meh and the food is underwhelming - it looks great for selfies, but the pancakes and waffles were under cooked (not crispy on the outside and doughy in the middle).

  Three tries to get a vegan breakfast sandwich without bacon, and the biscuits and gravy for another party at our table arrived about 3/4 of the way through our meal. We had to constantly ask for water refills on a fairly slow weekday morning. Used to eat at the Saint Paul location all the time, but will be a one and done for this location.
