Sushi Guys not only offers fresh sashimi and nigiri options but a number of their rolls can be made gluten free! This usually means removing all of the sauces and tempura at other places. Sushi Guys replaced the sauce with GF options and the tempura with crispy rice puffs! My husband (not GF) said the GF Castle roll is one of the best rolls he's ever had.
