I completely understand that what you do isn’t meant to be a quick service style meal, but that might be exactly why a different lunch option could help. Have you considered a weekday lunch buffet? It would give people a chance to enjoy your food without worrying about time. A lot of good buffets disappeared during Covid, and there’s definitely a gap in the market now. If you offered it and spread the word, I honestly think you’d see more people coming through the door and the business growing.
