Nestled in the historic village of Sion Mills, Joe’s Traditional Fish and Chip Shop, now 80 years old, has transformed under owner Louise Hamilton. She has added a cozy coffee haven, Milled Coffee House, featuring artisanal blends from New Kid Coffee, Letterkenny. The menu includes breakfast baps, sourdough toasties, fresh bakes, Teapigs specialty teas, ice-cream sundaes, and milkshakes.
During the pandemic, a pop-up ice-cream shop inspired Louise to create a comfortable seating area and barista coffee menu. “Getting the coffee right is crucial,” Louise shared. “I’m a self-confessed coffee snob, and I know one poor coffee can make all the difference.”
