As a food safety professional of 30y I would say if true this leads me to believe the owner is not committed to the safety of the food. Some investigation shows he inherited the business and is not involved, from my experience this is a bad combination for the safety of the food and there are likely other issues beyond just poor hygiene practices, but that’s just my professional experience with other food establishments owners.
