First timer, won't be the last. Finding fresh never frozen is not an easy task in the middle of the state. The Apps we had were great! Bartender Jenn was very friendly and so was the owner Mina. You can just tell they take pride in what they do. If your looking for a place with great food and a nice atmosphere check it out.

We came for the 420 Sour Cocktails ($4.20 between 3-6) which were delicious. I’m not entirely sure why there weren’t more people there slamming these down, because at this price it’s the best bargain in town.
Michaela was our bartender. She’s personable and attentive and makes excellent drinks. Another bartender, Jenn was just coming on towards the end of our visit and she too seemed very pleasant. Honestly, the whole staff here is professional, so 5 ⭐️ for service.
The atmosphere is lovely. We were told many of the plants suffered from the frost a few weeks ago, but even still it’s lush and green. With all the open doors and windows, There’s a bit of a New Orleans feel going on here. I think this may be the prettiest dining room in Sebring, so 5 ⭐️ for atmosphere.
Along with the 420 drinks we tried some appetizers: the Fried Calamari with Faded Remoulade sauce was excellent. Lots of tentacles as promised on the menu, and the sauce was a nice accompaniment. We also had the AAA Grade Ahi Tuna Poke on a bed of Wakame, a soy sesame marinade and fried wonton chips. This dish, unfortunately, fell a bit flat. The wontons were crispy and perfectly cooked. The wakame and marinade were also tasty. Unfortunately, the cubes of tuna were kind of bland as the dish was obviously made-to-order and the tuna had no chance of absorbing the flavor of the delicious marinade.
Michaela recommended we try the key lime pie. It’s certainly good, and if you like key lime pie this is a version worth seeking out. Is it traditional? No, not in the least. So if you’re looking for that dense, light yellow, very tart pie that you associate with classic Key Lime Pie this ain’t that. But it’s tasty just the same.
Note: The reason for the four stars is because they don’t have their menu prices on their website. I can’t stand it when places don’t reveal their prices upfront. And the “market price” on the menu for seafood items is another gripe. I hate having to ask: “What’s the price of the calamari?” or “How much is the fish sandwich?” Sure, seafood prices fluctuate, so figure out the average and price accordingly. Never put your guests in the uncomfortable position of having to ask.
Regardless of the quibbles, Faded Bistro is an excellent dining option for Sebring.
