    A little disappointed. My wife has been here 3 times and I have tasted her leftovers, not bad, got me interested. I try the appetizers, sprouts and some calamari. I am a sprout fan, and these were great. The calamari was also quite good. They are known for their steaks, so I got the 50 dollar ribeye, mid rare of course. They remove all fat and cut it in chunks prior to serving, not ideal, even for high-end. At least have a nice presentation for 50 bucks. Cooked nicely, zero seasoning. Not even a little finishing salt. It is sad, because the char... is just char. The claim is 21 days of dry aging. I wasn't picking up on that at all. Check my reviews, I eat all over the world. This was medium to medium high on my scale. The mash was very good, but the single carrot on top was also a bit lackluster. Good service, nice atmosphere, but at 155 bucks for two... there are some better places to go.

    My girlfriend and I went to Rare for Valentine’s Day, and it was hands down the best restaurant experience we’ve ever had. From the moment we walked in, everything felt special. The manager, Collin, was incredibly attentive and thoughtful, constantly making sure we were enjoying ourselves without ever being overbearing. You can tell he genuinely cares about the guests’ experience. Chef Casey absolutely crushed it. My steak was cooked perfectly, and my girlfriend’s pasta was amazing. The fact that he personally came out to check on our table meant a lot and showed the level of pride he takes in his food. He’s not only a phenomenal chef but just an awesome, down to earth person. Overall, 10/10 experience. We’ll definitely be back.

    Wow did we luck out! Perfect timing earned us a spot at the bar on Valentine’s Day. For this first visit we just enjoyed the calamari appetizer, authentic Italian bread and libations but will certainly be back to try their award winning steak. If you live in town or are just visiting, make a point to stop by and try this gem in Fort Collins

    Let me just say, I know good food & service, and our visit was beyond expectations. Jeffrey was such a knowledgeable server, and so attentive to assure we were happy. Nathan, head chef, was also there to make sure the dishes came out beautifully, and that we were satisfied. From the shrimp, and charcuterie board - to steak and pasta, these 2 girls left incredibly full, and might I say, extremely impressed. It'll be a dinner ill be talking about all year. Thank you RARE family!

    I hate writing this because Rare Italian used to be one of my absolute favorite spots in Fort Collins — especially for what was hands-down one of the best burgers in town. Unfortunately, my experience last night was incredibly disappointing. The burger that used to be a standout has clearly been changed, and not for the better. The flavor, quality, and overall execution were nowhere near what it used to be. What was once something I would specifically go out of my way for is now something I honestly wouldn’t order again. It’s frustrating to see a place known for doing something so well decide to “improve” it and end up making it worse. Consistency matters, and longtime customers notice when a signature item gets changed. I really hope they reconsider the new version and bring back the burger that made this place special.
