We came here for my dad 76th birthday. From the reservation to the check everything was excellent service was great very attentive waiter was very helpful and explained everything in detail. Food was great, steaks, sides, drinks everything was awesome no complaints

TLDR- worst steak and service I've ever had in a "chophouse"
Do not let the prices and nice ambience and decor fool you into thinking this is a proper steak house. My wife and I went in at 5pm on Sunday after a drive and we're both starving and excited to start off our stay with a nice meal. We had reservations at a great steak place in capital city but since we had just gotten out of the car, we opted to try out the chophouse in Monarch just so we could relax...big mistake
I will start with the positives, the French onion soup was quite good, very savory and it was nice they split it for us as we were sharing another appetizer. My wife's seabass was also excellent, definitely the highlight of the night, the broth was great and the fish was was cooked perfectly. Also, it would have been one star for service but all of the support staff were fantastic, very friendly, accommodating and attentive.
That being said, everything else was a huge disappointment. Our server clearly didn't think we were worth his time being in the restaurant, and was dismive from the start. I ordered a bottle of a Bordeaux blend and clearly was miffed when we turned down his higher bottle price recommendation and chose our own (and for the record, I have worked behind bars and in hospitality for 20 years and am a certified sommelier). We ordered oysters, which were described as small oysters similar to Kumamotos (my favorite). When they came out, my wife and I both had to check that we hadn't been given empty shells, literally there was almost no meat on any of them (twice the busser tried to clear the plate and we had to tell him that all the oysters were full). When we brought it to the servers attention, he said "well they are small oysters" and walked away. He did bring out two additional oysters on the house which were SO much better tasting and looking, which I appreciated, but it made me so confused as to how we got served the original six in the first place and the dismiveness of the servers comment.
My steak was the biggest disappointment....in a chop house. I ordered my NY Strip medium rare, and the steak came out straight up well done. Even my wife who prefers her steaks a bit more well said it was dry, overdone and mealy. The server came around for two seconds when my mouth was full, asked how the food was and then left before I had literally had a chance to say a word. Working in restaurants I hate sending food back, but would have made an exception for this as it was so objectively bad and cooked so far past what I ordered,, but after the response we had with the oysters, we were over it, so I choked half of it down and we asked for our check. As a lovely finishing note, our server said we could take our bottle of wine we ordered to our room, clearly ready to be rid of us.
We spent $300 on a terrible experience and learned our lesson. We come to the monarch multiple times per year with friends, and will make sure to tell everyone to go literally anywhere else, I would doordash a steak from Denny's before eating here again.
