It seems like they're using pork belly. Its really good in taco form but it was simply too fatty in a burrito.

Usually do not like cheese in my tacos but did not mind it in this shrimp taco. The fish taco was good in concept but too spicy for my taste. They brought tortilla chips to the table at the beginning of the meal. I liked the fact that the chips were warm, as if freshly made. The soft tortillas wrapped around the tacos were especially tasty, with a nice chew. Service was competent but perfunctory. The atmosphere was okay.
