19 octobre 1999, 3h30, dans le quartier de Saint-Roch à Québec, Patrick Nisot, après deux années de préparation minutieuse, met en marche le pétrin de La Boîte à Pain. Les premiers pains, façonnés avec soin, sont offerts aux passants curieux, attirés par l'arôme envoûtant du pain frais. À 8h15, un client insiste pour payer sa baguette, marquant ainsi le début officiel de cette aventure boulangère.
En 2008, inspiré par un voyage à Naples, Patrick décide d'introduire la pizza napolitaine à Québec. Ne trouvant pas d'espace adéquat dans la boulangerie originale, il saisit l'opportunité d'acquérir un four à pizza haute température disponible en ville. Ainsi naît La Boîte à Pain/Café Napoli à Limoilou, combinant boulangerie et pizzeria.
