    Making the roux. I like to butter the pan, make the minced garlic and onion translucent; then add the flour, (making the paste) then add milk. Actually, it’s better to do the roux in the same pan you sautéed the sausage if you can (Get all the flavors) The good thing about the roux, is you can use canned or fresh green Chiles instead of sausage and make a ‘green chile gravy’ …. And in the same concept, you can add cheese likes Mac and cheese sauce/gravy. I like using turkey sausage. Thank you! I can’t wait to try your place again!!! So good! My kids poor the green chile gravy on everything and even eat it with chips!!!
