  This is a great breakfast/brunch place! It has a very casual feel but still homey because of the greenery and fun bar setup. I love how diverse and unique the menu is - some really great options for specialty coffees and different takes on breakfast. The coffees are a bit expensive, but mostly on par with other places with unique offerings. The pistachio cardamom latte is a favorite and the carrot cake pancakes are particularly good! Also really enjoyed the stuffed poblano pepper breakfast dish :)

  Hope Breakfast Bar in Eagan is a must stop. Service is exceptional, food always comes out quick and is always top notch. If going with a friend or by yourself sit at the breakfast bar and watch the kitchen staff work their tales off. I have never had a bad experience with my service or food! Highly recommend you visit!

  Came in today and immediately said, "Table for 2, please." Response back was, "Do you have a reservation?" in not a friendly, accommodating way. We were seated immediately in the closest table. Not friendly staff either. Waiter came up quickly and I said I would like a minute because maybe I get a coffee drink instead of just coffee (black coffee, BTW, is $6!!!!). Server left, I perused the menu and not 30 seconds later, "have you decided?" from the server. Just not friendly all around. We got up and left. Prices were pretty high, staff was hurried and unfriendly. Just an unpleasant experience.

  Really enjoyed brunch! Both I and my vegan friend had a wide choice of entrees and the two we ordered were excellent. She had the Vegan Farm Grazer and I had the Salted Cinnamon Roll Waffle.

  My girlfriend and I went the other day and I have to say, the BEST place to get brunch. I would recommend getting a reservation for Sunday brunch since it is a busier time of their week (and because it really is just THAT good!). I have worked 10+ years in the service industry and I have to say that this place is beyond top tier. The staff is so professional and kind and the management is beyond amazing. The manager, Jeremy, was incredibly hands-on with his staff and he made time to come talk to us, even when it was extremely busy. Jeremy makes sure that everyone that comes in leaves happy with their experience. Our server, Anna, was incredibly knowledgeable and offered excellent recommendations that did not disappoint. The bartenders, Lexi and Addi, were efficient, skilled, and outstanding at what they do. My girlfriend had the Chicken Biscuit, and I ordered the B.B.L.A.T.; both were incredibly flavorful. The Bloody Mary I had was easily one of the best I’ve ever tasted. In the end, the combination of exceptional service, delicious food, and a welcoming atmosphere made this one of the best brunch experiences we’ve ever had. We can’t wait to come back and enjoy it all over again!
